Bang! Bang! Baked Bean Beetroot Salad

The camera’s in the shop, so please enjoy this generic photo of beetroot.

If the name of this dish doesn’t excite you then maybe this simple food will. I refer to it as a dish more than a recipe, as it took less than ten minutes to prepare. Enjoy it as a last moment supper.

Serves 1-2 / very easy

Baked beans x 1 tin

Hot smoked paprika x 1/2 tbs

Turmeric (ground) x 1/2 tsp

Caraway seed x 1/3 tsp

Chilli powder x 1/3 tsp

Sage (fresh) x 1 tsp (minced)

Jack Daniels Smooth Original BBQ Sauce x 1 tbs

Sauerkraut x 1 tbs +tbs of juice

Kale x handful, chopped

Celery x 1 stalk, chopped in thirds

Water x 1 tbs

Beetroot (fresh) x 1 (grated)

Cucumber x third, sliced

Nutritional yeast flakes and course black pepper to taste

Mix all the ingredients together in a saucepan (apart from last three, including seasoning) and simmer with lid on for 5-10 minutes. Now serve with the remaining salad ingredients side by side in a large bowl. Season.

More fragrant than spicy-hot.
