Ganana Carob Cake

This is a spicy twist on banana cake and features fresh ginger. It’s warmth makes it especially enjoyable in the colder months.  Can be served with custard, but should be moist and delicate enough to serve as is. Enjoy.

Serves 8 / easy


Wholemeal flour x 1 cup

Carob powder x 2 Tbs

Baking powder x 2 tsp

Bicarbonate 0f soda x 1/4 tsp

Salt x 1/2 tsp

Sugar x 1/2 cup

Cinnamon x 1 tsp

Cardamom seeds x 1/3 tsp

Vanilla x 1/3 tsp

Ginger x 1 tsp (minced)

Banana x 1 cup (mashed)

Tahini x 1 Tbs

Olive oil x 1/2 cup

Vinegar x 1 Tbs


Mix dry ingredients and add the wets

Pour into greased 8″ cake tin (circular)

Bake for 40 mins. at 180c

Put toothpick in middle, if clean the cake is ready

Serve warm
